The kitchens behind the film

Who is Gusteau?

The film’s great cook was built from real chefs, and its makers went and ate in real dining rooms.

La Côte d’Or, Saulieu

Wikipedia’s Loiseau article names Loiseau and Paul Bocuse as the partial models for Gusteau.

Wikipedia’s film article says Brad Bird and others visited La Côte d’Or in France during their research trip. It says the chef Gusteau was partly inspired by Bernard Loiseau, whose restaurant was rumoured to be losing a Michelin star.

Claude Verger bought the restaurant in 1975 and made Loiseau its chef. Loiseau bought it from Verger in 1982. The Michelin Guide gave it three stars in 1991. As of 2021 it held two, under the executive chef Patrick Bertron.

The French Laundry

Wikipedia’s film article says the producer Brad Lewis interned in the kitchen of Thomas Keller’s French Laundry.

It also says animators took cooking classes in the San Francisco area to learn how a commercial kitchen works.

Sally Schmitt opened the restaurant in 1978 in a building dating to the 1890s. Thomas Keller bought it from her and her husband Don in 1994.

The ride

Gusteau’s is a building now

The outside is Gusteau’s restaurant, surrounded by buildings of a Parisian plaza.

It was inaugurated on 21 June 2014 and opened to the public on 10 July 2014. It is a trackless dark ride with rat-shaped vehicles and 3D dome segments.

It opened on 1 October 2021, delayed from 2020 by the pandemic and timed to Walt Disney World’s 50th anniversary. It uses the same trackless ride system as Rise of the Resistance and Mickey & Minnie’s Runaway Railway.

Walt Disney Imagineering designed it. Wikipedia gives an estimated budget of US$150 to 240 million.

Inside the park: a park ticket is needed. The ride is in the Worlds of Pixar area.
